Happy Birthday to me! That's right. Today's my birthday.
It's also my Martha Monday pick. And you would think I would have picked a cake or something but I just couldn't decide on a cake. Plus with Independence Day right around the corner, I figured most participants would have their own traditional desserts planned. So, I went with this easy tasty appetizer from the July issue of Living. Bruschetta.
Now, I've made bruschetta before. It doesn't really require a recipe. Mine usually consists of tomatoes, olive oil, salt, basil, and red wine vinegar. I mix all those things together and serve it with some thinly sliced and toasted bread, drizzled with olive oil and rubbed with garlic.
This recipe is pretty similar. There's no vinegar, though. And onions are added. Plus, the bread is a loaf of french bread, cut in half lengthwise. I didn't care too much for the bread. It was a little too thick. Because it was thick it was softer, less crunchy and didn't show off the topping very well.
So, the topping gets two thumbs up. It's easy. Pretty. And tasty too. But I'd recommend sticking with thin slices of bread, toasted on both sides, rubbed with raw garlic, and topped with the tomatoes. A perfect summer appetizer. (Or a whole meal if you can't stop yourself!)

Happy belated birthday! Hope you had a great day. I didn't use the bread suggested and used pre-sliced bread whose purpose is for bruschetta - we loved this, so tasty!
