This week all my menus have come from Cooking Light. I'm trying to lower my cholesterol, lower my blood pressure, and lower my weight. Ugh! Sooooo, to enjoy tasty food I've turned back to a tried-and-true favorite . . . Cooking Light. I'd been saving a recipe for Spice-Rubbed Pork Tenderloin with Mustard Barbecue Sauce for a while. Since the weather has been nice it seemed a perfect time to pull out this recipe for the grill. It was so easy and so very good. I made the sauce earlier in the day. I followed the recipe to a T, even though my husband does not like onions. Well, I might have used a half cup of onions instead of a whole cup. But other than that I made it just like the recipe says. The aroma of the sauce made me so excited to make the rest of the dish. It smelled so yummy. Better than any mustard BBQ I got living in South Carolina!
The pork tenderloin was easy to prepare. I simply mixed the dry rub and smeared it all over the pork. My husband grilled it on a low heat until the internal temperature was 155 degrees. We let it rest to make sure all the juices stayed in the meat. Then we sliced it up and slathered it with sauce. Yum! I highly recommend this dish. The pork was tender. The flavors assertive. Invite some friends over and BBQ!
